La Chaîne des Rotisseurs Bailliage du Vietnam is pleased to announce that M Jeremie Courivault , Professional du Vin, has been nominated to receive the Bronze medal of excellence for his service to our esteemed association. We hope to be able to award this prestigious medal to M Courivault at our Chapitre Induction ceremony event later this year in Hanoi.
 
M Courivault is a French citizen that was born in Niamey, Niger, Africa. He attended school in France until the age of 16 and then decided to branch out on his own, starting a small video game shop close to his secondary school, Lycée Aristide Briand, in Brittany’s quiet beach town, Saint-Nazaire, and then expanding to a second location, the more populous Châteaubriant.
 
During his weekends and holidays, he spent his time as a waiter and an apprentice learning about Food and Beverage at le République Brasserie in Saint-Nazaire, France, but it wasn’t until he circumnavigated halfway around the globe to Vietnam, that his career really took off.
 
In 2000, at the tender age of 20, Jeremie landed in Hanoi and immediately started working in the hospitality arts as a manager of various local spots; Semi Pub, Ming Ming Café, IBOX, Ha Tay Brewery, Legend Beer, to name a few.
 
In 2003, Jeremie was recruited by An Nam group to run the new equipment division of their wine wholesale company, the Warehouse. He’s been there ever since, and over his 18 year-long career, he has become one of the best-known, most respected and knowledgeable personalities in the region’s wine trade.
 
With the kitchen and bar equipment industry, M Courivault worked diligently learning, travelling, absorbing, and becoming an expert in the vocation. A man with a keen eye and extensive international training, he can identify most fine glassware at a distance and describe who the manufacturer is, what the purpose of the vessel is, and what wine, spirit or liquid best suits its shape.
 
Due to his efforts and diligence, the kitchen and bar equipment business successfully achieved industry notoriety and found its path to running on autopilot. In 2004, M Courivault was asked to step up to a new challenge, further broaden his knowledge, move South, and manage the Warehouse wine shop in Ho Chi Minh City.
 
His initial approach to wine, unlike most of his countrymen, was through the mentorship of Youri Korsakoff and Roger Gaffney, who encouraged him to learn, try and experiment with New World wines, Australia, New Zealand, and Chile. In their presence, Jeremie learned more about wines and spirits than some do in a lifetime.
 
After an illustrious eight years in the hustle and bustle of Saigon, it was time to take another promotion with the Warehouse and move back to Hanoi where he remains today. Since 2012, M Courivault has run the North and Center of Vietnam for the Warehouse and with his help, they have been able to expand to nine stores nationwide.
 
When queried about his reasons for joining la Chaîne, M Courivault muses about Vietnam, especially the North, being the epicurean center of Southeast Asia. He feels that a Country, having once been touched by Bacchus, the Roman god of agriculture, wine, and fertility, is a place that truly understands good food, cheese, bread and of course wine. La Chaîne in its mission and indefatigable pursuit of high standards, and the quest for knowledge, can revive, uncover, cultivate, apply, and celebrate the expertise which existed prior to the region’s many recent conflicts.
