La Chaîne des Rôtisseurs Bailliage du Vietnam is pleased to introduce Maître Rôtisseur, Nico Ceccomoro, the Executive Chef of Cugini Ristorante and the highly-anticipated and upcoming Culina Gastro Café and Modern Dining in Hanoi.
 
A long-time and ardent supporter of la Chaîne in Vietnam, Chef received his ribbons and diploma at our inaugural Grand Chapitre Ceremony in Ho Chi Minh City in August of 2018.
 
Chef Ceccomoro hails from Città della Pieve in the Umbria Region of Italy, closely situated to Tuscany. His birth home is also the birthplace of the Renaissance artist Perugino (Pietro Vannucci), and is the holiday home of, among others, actor Colin Firth, Prime Minister Mario Draghi and interior designer Tricia Guild.
 
Born into the hospitality business, Chef Ceccomoro attributes his comfort with serving and delighting guests with the two strong women in his life, his aunt, who owned the most prominent villa in his Medieval getaway hometown, and his mother, the local restaurateur.
 
Growing up, Chef Ceccomoro always dreamed of becoming a musician. He soon realized that perhaps the local hospitality school was more accessible, so he went on his way, first studying at the State Professional Institute for Hotel and Catering Services, IPSAR Pellegrino Artusi Chianciano Terme, and then completing his education and concurrently learning English in Australia at the Sydney Business and Travel Academy (SBTA).
 
With previous postings in Italy, Australia and the United Kingdom, Chef’s arrival in Vietnam was purely coincidental and completely unintended. On the recommendation of a very special cousin in Australia, Chef was dispatched to Hanoi to investigate the local marketplace. It was only a matter of time before he fell in love with this Country and has remained for the last seven years.
 
Chef prides himself in his previous experiences, having worked with amazing chefs in his life, and having a true curiosity about the deepest intentions of food. Cugini Ristorante has always been a bastion of fine Italian Cuisine in Vietnam and we believe his new venture, the upcoming Culina Gastro Café and Modern Dining restaurant, which is slated to open in a few weeks’ time, will be equally popular and beneficial to the landscape of upscale hospitality in Hanoi.
