La Chaîne des Rôtisseurs Bailliage national du Vietnam would like to give a warm welcome to M Hoang Tung, partner, and executive chef at TUNG Dining and Å by TUNG, as Maître Rôtisseur in our beloved global organization.
 
If you were able to go back in time a few years and ask Chef Tung about his ambitions in life, he was clearly on the path to being a salaryman in a large monolithic organization.
 
It was only as a result of his education in Scandinavia that he found himself working part time in restaurants such as the Michelin-starred Demo in Helsinki and discovering that he had an eye, the sense and clear artistic talent in the kitchen.
In 2018, Chef Tung, now a skilled and experienced multi-disciplinary chef, returned to compete in the Bocuse d’Or competition for Vietnam. Despite being a solo competitor slated to do battle against full hotel F&B brigades, Chef Tung placed a very respectable third place, taking the bronze title for the competition.
 
A few months later, in June of 2018, Chef Tung returned to live in Vietnam and to search for a location for his Scandinavian fine dining concept, TUNG Dining.
 
By December of that year, after spending all his energy and life savings, the doors of the restaurant were open, and the vision of the Chef restaurateur started to take shape. Unbeknownst to him at the time, the course of upscale and luxury dining in Vietnam has forever been changed.
Today, Chef Tung runs two restaurants, TUNG Dining in Hanoi and Å by TUNG in Ho Chi Minh City which opened in January 2021.
 
He employs 60 dedicated staff that follow his strong vision and culture of self-development and perpetual learning. Chef Tung sees himself more as the Chief Executive of a growing concern rather than just the man in the kitchen. He is delighted to go to work every day, to learn, to experiment, and to teach.
